Taffy Apple Salad

 

1 large can crushed pineapple in heavy syrup

2 c. mini marshmallows

½ c. sugar

2 Tbsp. flour

1 egg (well beaten)

1½ Tbsp. vinegar

12 oz. Cool Whip

4-5 Honeycrisp apples

1 can salted cocktail peanuts (with skin)

DAY ONE

Drain pineapple (save the juice!).  Mix pineapple with marshmallows.  Cover & refrigerate over night.

Heat pineapple juice, flour, sugar, vinegar, and egg over low heat, constantly stirring, until thick.  Let it cool.  Cover & refrigerate over night.

DAY TWO

Mix the refrigerated items with Cool Whip, chopped apples and peanuts.
