Barb’s Gazpacho

 

2-3 c. tomato juice

1 tomato, chopped (optional)

½ c. each cucumber, celery, green pepper, coarsely chopped

1/3 c. chopped green onion

1 clove garlic, minced

2-3 Tbsp. red wine vinegar

1 tsp. salt

¼ tsp. pepper

½ tsp. Worcestershire sauce

1-2 tsp. olive oil

 

Combine all ingredients in blender.  Pulse to combine.  Chill 4 hours before serving.

 

Note:

Use above proportions as guidelines, and adjust according to taste preference and ingredient availability.  Also, use any dry or fresh herbs if desired.
