Fruit Muffins

 

2 c. flour

1/3 c. sugar

1 tsp. baking soda

1 tsp. baking powder

¼ tsp. salt

¼ c. orange juice

2 Tbsp. vegetable oil

1 tsp. vanilla

1 (6 oz.) container vanilla yogurt

¼ c. skim milk

1 c. fruit – such as blueberries, peaches, strawberries

1 Tbsp. sugar

 

Combine dry ingredients in a large bowl; make a well in center of mixture.  Combine liquid ingredients and stir well.  Add to dry ingredients, stirring just until moistened.  Gently fold in fruit.

Divide batter evenly amount 12 muffin cups coated with cooking spray, then sprinkle with 1 T. sugar.

Bake at 400 degrees for 18 minutes or until golden.  Remove from pans immediately and let cool on a wire rack.
