French Onion Tomato Soup

 

4 c. thinly sliced onions

1 clove garlic, minced

2 T. butter or olive oil or Pam for a low-fat alternative

1 can (46 oz.) tomato juice or V8, preferably low sodium

2 t. beef bouillon granules

3 T. lemon juice

2 t. dried parsley

2 t. brown sugar

 

In large saucepan, sauté onion in oil or Pam until tender.  Add the rest of the ingredients, bring to a boil.  Reduce heat and simmer uncovered for 10 minutes.

For an additional treat:  toast French bread, top with shredded mozzarella or parmesan cheese and broil for the “French onion” effect.
