Candied Sweet Potatoes

 

4 ½ lbs. sweet potatoes

4 Tbsp. unsalted butter

1 c. apple cider

1 c. orange juice

½ c. light brown sugar

1 small stick of cinnamon

Salt & pepper to taste

 

Preheat oven to 400 degrees.   Bake the sweet potatoes until tender, about 1 hour.  Peel and slice into ½ to ¾ inch slices.  Arrange in a greased casserole.

Combine the cider, orange juice, and brown sugar in a saucepan and boil for 10 minutes.  Season with salt and pepper.  Remove the cinnamon stick.  Whisk in the butter.  Pour the mixture over the sweet potatoes.  Bake for 20-30 minutes or until heated through.
